Steaming before the final fried surface
Fatima Cooks presents Lahori chargha through her own household cooking: a skinless whole chicken receives a yoghurt, vinegar, egg and gram-flour marinade with spices. Her written method makes cuts in the meat before marinating and suspends the bird above water for steaming. She describes using vegetables as a support, while allowing a trivet or steamer basket. The equipment separates the chicken from the bottom of the pot.[1]
The final frying stage colours the surface after the chicken has steamed. Fatima also offers her own gravy made from the seasoned liquid left in the steaming vessel, as an accompaniment to the bird. This turns a cooking by-product into part of the served meal. Her account is a specific home adaptation, connecting the two cooking stages with decisions about the sauce and how the chicken is presented. Her additional optional finishing seasoning is chaat masala.[1]
A different mixture on the whole bird
Kanwal Mohsin’s Food Fusion recipe likewise marinates, steams and then fries a whole chicken. Its mixture includes egg and corn flour, lemon juice and vinegar, ginger-garlic and spices such as mace, nutmeg, cumin and carom seeds. Unlike Fatima’s specified mixture, this ingredient list does not include yoghurt or gram flour. The shared dish name therefore accompanies a different documented coating rather than one compulsory marinade formula.[2]
Food Fusion places the bird on a steam rack, with its legs tied, and describes basting during steaming before a resting and frying stage. Chaat masala finishes the served chicken. The written preparation makes the whole-bird form and the sequence of treatment especially visible. Read beside the home version, it shows how cooks can retain that broad arrangement while changing the ingredients and tools used at individual stages.[2]
Chicken pieces and tomato rice
Irfan Wasti’s Masala TV preparation, from a Flame On Hai programme aired in December 2020, is titled Lahori Chargha with Tomato Rice. The ingredient heading says chicken with bones, and the written method specifies drumsticks. These receive yoghurt, lemon, ginger-garlic, chilli and other seasoning before frying. Unlike the two whole-bird recipes, its inspected written method does not include a separate steaming stage.[3]
Wasti prepares a distinct rice component with onion, tomato paste, ginger-garlic and whole spices including cumin, cloves, cinnamon and star anise. The chicken is served with the rice as a composed platter. The example broadens the picture from a whole bird served with separate accompaniments to a jointed meal, while keeping its chef and published title attached to that particular variation.[3]
