A coating with garlic water and whole seeds
Uzma Fakhar’s Lahori Fish Fry for Food Fusion first treats the fish pieces with sifted all-purpose flour. A separate mixture combines lemon juice with garlic blended in water, cumin, carom and coriander seeds, garam masala, turmeric and chilli. Gram flour then forms the thicker coating. The written method distinguishes the initial flour treatment from the seasoned batter that later surrounds the fish, rather than combining every ingredient at once.[1]
The mixture includes both crushed chilli and chilli powder, while crushed cumin and coriander remain visible as seeds in the ingredient list. These choices document a particular balance of texture and seasoning. After coating and marinating, the fish is fried. The source identifies fillets without making one fish species mandatory, leaving that part of the preparation less narrowly specified than the other recipes compared here.[1]
A simpler fenugreek-seasoned version
Rida Aftab’s recipe for Masala TV’s Tarka programme, aired in July 2021, uses garlic paste, dried fenugreek, lemon, red chilli, gram flour and a prepared fish-masala mixture. Her brief written method combines these with the fish for marination before frying. The fenugreek and prepared spice mixture give this published version a distinct specification beside Food Fusion’s longer list of separately named seeds and spices.[2]
Aftab’s written ingredient list does not identify a fish species. It documents the seasoning and cooking treatment while leaving that ingredient choice open. Her recipe is one broadcast preparation carrying the Lahori title; its use of a prepared masala is a recorded kitchen choice, rather than a definition of every fish fry sold or cooked under that name.[2]
Surmai and a separately mixed batter
Food Tribune’s Lahori Fried Fish specifies surmai fillets, first coated with lemon, salt and garlic paste. Its batter is mixed separately from gram flour, carom and coriander seeds, baking powder and ground spices, then applied before frying. The publication presents the result with mint chutney as an option. This version therefore differs in fish specification and the preparation of its coating, while sharing several ingredients with the first account. Its ground seasoning includes red chilli and turmeric, while the whole seeds remain separately identified in the ingredient list.[3]
The three recipes make seasoning, grain coating and sequence more precise than the regional adjective alone. They describe contemporary food practice through named contributors and publishers. Their differences are retained here as actual variations in the preparation, without turning the title into a claim that one fixed formula represents every kitchen or establishes the dish’s first historical appearance.[3]
